Saucy Chicken With Mushrooms

INGREDIENTS:

6 Chicken Leg Quarters, Skinned
1 Teaspoon Italian Seasoning
1/4 Teaspoon Pepper
1/2 Cup Chicken Broth
1 Cup Sliced Mushrooms
1 Carrot, Shredded
1 Tablespoon Oil
3 Tablespoons Soy Flour
1/4 Cup Sour Cream

DIRECTIONS:

"Preheat oven to 350 degrees.

Arrange chicken in a 13 x 9"" baking dish. Sprinkle with Italian seasoning and pepper. Pour wine over top. Cover and bake 45 minutes. Uncover and bake until done, about 15 minutes. Measure out 2/3 cup drippings; set aside.

In hot oil, saute mushrooms and carrots until tender. Stir in flour, cook 1 minute, then stir in reserved drippings. Continue cooking until thickened. Stir in sour cream; pour over chicken."
