Turkey Carcass Soup

INGREDIENTS:

6 Cups Turkey Broth
2 Carrots
2 Stalks Celery
1 Onion
8 Ounces Turkey
1/3 Cup Tubettini

DIRECTIONS:

Combine all ingredients except pasta in large stock pot. Bring to a boil, and then simmer covered 2-3 hours. Strain soup. Refrigerate broth until fat congeals and skim from top. While broth is chilling, pull any remaining meat from bones. Chop meat and vegetables into bite size pieces.

Once broth has been skimmed of fat, combine all broth, meat and vegetable mixture. Bring to a boil. Add pasta or rice. Turn heat down and simmer for 20 more minutes.
