Potato Corn Chowder
INGREDIENTS:
12 Slices Bacon, Chopped
1-1/4 Pounds Potatoes, Peeled And Cubed
13-1/2 Ounces Chicken Broth
10 Ounces Frozen Corn, Thawed And Drained
1/2 Cup Onions, Chopped
1/2 Cup Celery, Sliced
2 Tablespoons Flour
1/2 Cup Miracle Whip
2 Cups Milk
DIRECTIONS:
Cook bacon in large saucepan until crisp. Drain. Return to pan. Stir in potatoes, broth, corn, onion and celery. Bring to boil. Reduce heat to low. Simmer 15 minutes or until potatoes are tender. Mix flour and Miracle Whip. Stir in milk. Add to potato mixture. Continue cooking 3-5 minutes or until thoroughly heated. Sprinkle with additional cooked bacon and/or shredded cheddar cheese if desired.
