Sausage Rice Creole

INGREDIENTS:
2 Pounds Pork Sausage, Cooked, Crumbled And Drained
28 Ounces Canned Diced Tomatoes
1 Green Pepper, Diced
6 Green Onions, Sliced With Greens Set Aside
1 Teaspoon Black Pepper
1 Cup Uncooked Long-Grain Rice
1 1/2 Cups Water
DIRECTIONS:
In large saucepan, cook sausage over medium high heat, stirring frequently until thoroughly cooked and no longer pink. Add tomatoes, green pepper, white part of onion and black pepper. Bring to a boil; cover and simmer on low heat for 10 minutes. Add rice and water, return to a boil; reduce heat to low. Cover and simmer 20-25 minutes or until rice is tender. Remove from heat, stir in green onions; cover and allow to rest 5 minutes before serving.
