INGREDIENTS:
2 Tablespoons Onion, Chopped
1 Clove Garlic, Finely Chopped
1 Pound Ground Game, (Any Kind)
2 Tablespoons Vegetable Oil
1 Can (14.5 Ounces) Tomatoes
4 Ounces Tomato Sauce
1/4 Teaspoon Pepper
1 Teaspoon Salt, For Sauce
1 Teaspoon Oregano
5 Quarts Water
1 Tablespoon Salt, For Pasta
8 Ounces Macaroni Product
1 Cup Cottage Cheese
8 Ounces Mozzarella Cheese, Sliced Thin Across The Grain
1/4 Cup Parmesan, Grated
DIRECTIONS:
Chop onion and garlic, mix with meat and add to heated oil in frying pan. Cook until meat is browned evenly and lightly. Add tomatoes, tomato sauce, and spices. Simmer, stirring occasionally, about 45 minutes until mixture is reduced to consistency of sauce.
In a large pot, heat water to a rolling boil, add salt and macaroni product. Cook until tender according to package directions. Drain.
In a square baking dish, spread 1/3 of the meat sauce; then half the macaroni, half the cottage, Mozzarella, and Parmesan cheese; half the remaining meat; the rest of the macaroni; then the rest of the cheeses topped by the rest of the meat, with a bit of cheese sprinkled on top. Bake at 350 degrees for 20-30 minutes until bubbly. Cool 15 minutes, cut into squares and serve.
