Easy Enchiladas

INGREDIENTS:

10 Or 12 Large Flour Tortillas
1 Pound Cheddar Cheese, Grated
1 Onion, Diced
Sour Cream
Lettuce
1 Pound Ground Beef
1 Can Tomatoes With Green Chilies
2 Cans Chili With Beans
1/4 Cup Onion, Finely Chopped
2 Tablespoons Vegetable Oil
1 Can Enchilada Sauce
1 Can Tomato Paste
2-3 Cans Water
1/4 Teaspoon Oregano
2 Tablespoons Chili Powder
1/4 Teaspoon Garlic Powder

DIRECTIONS:

For Filling: Brown meat. Add remaining ingredients and simmer until thick (about 1 hour).

For Enchilada Sauce: Saute onion in oil. Add enchilada sauce, tomato paste, water, oregano, chili powder, and garlic powder. Simmer while filling cooks.

Assembly: Place 1/3 C. filling along with some grated cheese and chopped onion in each tortilla. Roll up. Place seam side down in large, greased baking pan. Top with sauce, remaining onions, and cheese. Bake at 350 degrees for 20 minutes.

Serve with finely shredded lettuce on the side and a dollop of sour cream.
