Zucchini Nut Breads

2 Loaves

INGREDIENTS:

3 Eggs, Beaten
2 Cups Sugar
1 Cup Vegetable Oil
2 Cups Zucchini, Grated
2 Cups Flour
1/4 Teaspoon Baking Powder
3 Ounces Unsweetened Chocolate
1 Teaspoon Salt
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
2 Teaspoons Vanilla
1 Cup Walnuts/Pecans, Chopped

DIRECTIONS:

"Add sugar and oil to eggs. Mix well. Mix in zucchini. Add dry ingredients, vanilla, and nuts. Pour into 2 greased and floured 9"" x 5"" loaf pans. Bake at 325 degrees F. for 1 hour. "
