Apple Filling For Crepes

INGREDIENTS:

2 Granny Smith Apples
1/2 Cup Water
1/3 Teaspoon Lemon Juice
3 Tablespoons Sugar
3 Tablespoons Brown Sugar
1/8 Teaspoon Salt
1/3 Teaspoon Cinnamon
1/8 Teaspoon Allspice
2 1/2 Teaspoons Cornstarch
1 2/3 Tablespoons Water

DIRECTIONS:

"Dice apples into water with lemon juice (after dicing, water should almost cover apples). Add sugars, salt, spices (adjust spices to taste). Bring to boil then reduce heat to simmer for 10 to 12 minutes. (Apples should be soft, but not mushy). Add cornstarch mixture 1/2 teaspoon at a time to desired thickness (allow juices to ""cook down"" before adding last of cornstarch. The mixture thickens as it cooks)."
