Pineapple Cookies

5 Dozen

INGREDIENTS:

1 Cup Shortening
2 Cups Sugar
1 Egg
9 Ounces Crushed Pineapple With Juice (1 Cup)
3-1/2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
1/2 Teaspoon Nutmeg
1/2 Cup Nuts, Chopped

DIRECTIONS:

Mix shortening, sugar and egg. Stir in pineapple. Sift together flour, baking soda, salt and nutmeg. Stir in to shortening mixture. Mix in chopped nuts.

Chill 1 hour before dropping by rounded teaspoons 2 inches apart on lightly greased cookie sheet.

Bake at 400 degrees for 8 minutes.
