Texas Style Oatmeal Cookies
3 Dozen
INGREDIENTS:
3 Eggs
1 Cup Brown Sugar
1 Cup Sugar
1 Teaspoon Honey
3/4 Teaspoon Vanilla
2 Teaspoons Baking Soda
1-1/2 Cups Smooth Peanut Butter
1/2 Cup Butter, Softened
4-1/2 Cups Oats
1/2 Cup M&M’s
1/2 Cup Chocolate Chips
DIRECTIONS:
"In large bowl, slightly beat eggs. Add sugars and mix well. Stir in honey, vanilla, and baking soda. Add peanut butter and butter. Beat until smooth. Stir in oats, candies, and chocolate chips. Mix until oatmeal is moistened and M&Ms are well distributed. Drop by well- rounded tablespoons onto ungreased baking sheet, placing only 6 cookies on each sheet. Press down with bottom of glass that has been covered with dampened cloth. Bake in 350-degree oven for 10 to 12 minutes or until lightly browned. (Cookies will still be puffed up and soft.) Let cool on baking sheet for 2 to 3 minutes before removing with pancake turner to finish cooling on cooling racks. Makes 3 dozen cookies 4"" to 5"" in diameter"
