Carrot Cake


INGREDIENTS:

3 Eggs
1 Cup Vegetable Oil
1 Cup Sugar
2 Cups Flour
2 Teaspoon Cinnamon
2 Teaspoons Baking Powder
2 Teaspoons Baking Soda
1 Teaspoon Salt
2 Cups Carrots, Grated, Loosely Packed
1 Cup Pecans, Chopped
6 Tablespoons Margarine
6 Ounces Cream Cheese
3/4 Teaspoon Vanilla
3/4 Box Powdered Sugar
1-1/2 Tablespoons Milk
2 Ounces Pecans, Chopped

DIRECTIONS:

"Heat oven to 350 degrees. Line 2 9"" pans with greased wax paper. Blend eggs, oil, and sugar. Sift flour, cinnamon, salt, soda, and powder. Combine with liquid. Fold in nuts and carrots. Bake 35-40 minutes. Mix margarine, cream cheese, vanilla, powdered sugar, milk, and nuts for icing. "
