Apple Layer Cake

1 Nine-Inch Layer Cake

INGREDIENTS:

4 Cups Apples, Peeled and Finely Chopped
2 Cups Sugar
3 Cups Self-Rising Flour
1/2 Teaspoon Salt
1-1/2 Teaspoons Baking Soda
2 Eggs, Beaten
1-1/3 Cups Canola Oil
Coconut-Pecan Frosting:
1-1/2 Cups Sugar
5.33 Ounce Can Evaporated Milk
1/2 Cup Butter
1/2 Cup Chopped Pecans
1 Cup Flaked Coconut

DIRECTIONS:

Cake Layers:
Combine apples and sugar; toss lightly to mix. Let stand 30 minutes. Add flour, salt, and baking soda. Beat 1 minute on medium speed of an electric mixer. Add eggs and oil. Beat 3 minutes on medium speed. Divide batter evenly into three 9-inch round cake pans. Bake at 350 degrees for 25 minutes or until cake tests done. Frost top and between layers with Coconut-Pecan Frosting.

Coconut-Pecan Frosting:
Combine sugar and evaporated milk in a saucepan. Cook over medium heat, stirring constantly until soft ball stage is reached or until thermometer registers 20 degrees. Add butter, pecans, and coconut, stirring until butter melts.
