Strawberry Muffins

12 Muffins

INGREDIENTS:

1-1/2 Cups Flour
1/2 Tablespoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
2-1/4 Teaspoons Ground Cinnamon
1/2 Cup Plus 2 Tablespoons Milk
1 Extra Large Egg, Lightly Beaten
1/4 Pound Butter, Melted
1 Cup Fresh Strawberries, Diced
3/4 Cup Sugar

DIRECTIONS:

Preheat oven to 375 degees F.

Sift the flour, baking powder, baking soda, salt, and cinnamon together in a large bowl. Stir to make sure the dry ingredients are thoroughly combined.

Combine milk, eggs, and melted butter.

Make a well in the center of the dry ingredients. Pour the milk mixture into the well. Stir until just combined. Do not overmix the batter. Add the strawberries and sugar and stir gently just to combine.

Spoon the batter into lined muffin pan. Bake for 20-25 minutes until nicely browned and cake tester comes out clean.
