Steak Fajitas

INGREDIENTS:

16 Ounces Lean Sirloin Steak
2 Tablespoons Olive Oil
1 Tablespoon Lime Juice
1 Garlic Clove, Finely Minced
1/2 Teaspoon Chili Powder
1/2 Teaspoon Cumin
1/2 Teaspoon Hot Pepper Flakes
1/2 Teaspoon Black Pepper
1/2 Teaspoon Salt
8 Flour Tortillas, 8-Inch
2 Onions
2 Bell Peppers
Toppings:
Chopped Tomato
Cubed Avocado
Grated Cheddar

DIRECTIONS:

Slice steak into thin strips.

Mix together 1 tablespoon olive oil, lime juice, garlic, chili powder, cumin, red pepper flakes, black pepper and salt. Add beef strips and stir to coat. Set aside

Cut onions in half lengthwise and slice into strips. Cut bell peppers into strips.

Wrap tortillas in foil and heat in a 350 degree oven for 10 minutes.

In large skillet or wok, heat remaining tablespoon of olive oil. Add onions and peppers and tir for 4 minutes until softened. Transfer to a bowl and set aside.

Add beef to skillet. Cook, stirring for 4 minutes. Return onions and pepper so skillet. Cook and stir for one more minute.

To serve, spoon a postion of the beef mixture down the center of each tortilla. Top with yout desired toppings. Fold the sides in and bottom of tortilla up over filling.
