Smokin Good Bourbon Baked Beans

INGREDIENTS:

1/2 Pound Bacon, Cut Into `/2 Inch Squares
1 Medium Onion, Diced
1 Bell Pepper, Diced
15 Ounces Red Kidney Beans, Drained And Rinsed
15 Ounces Pinto Beans, Drained And Rinsed
15 Ounces Black Beans, Drained And Rinsed
8 Ounces Fresh Pineapple, Cut Into Chunks
1/4 Cup Bourbon
1 Cup Brown Sugar, Packed
1 Cup Ketchup
1 Heaping Teaspoon Dry Mustard
1/4 Teaspoon Salt
1/4 Teaspoon Black Pepper
1 Bay Leaf

DIRECTIONS:

Fry bacon pieces in skillet until crispy. Remove from pan with a slotted spoon. Saute onion and bell pepper in bacon fat in same skillet until tender. Combine beans, pineapple, brown sugar, bourbon, ketchup, and dry mustard in a large mixing bowl. Stir in bacon, sauteed vegetables and bay leaf. Pour into a deep 9 x 9 baking pan. Place in a 225 degree smoker for 3 hours. (You can also bake in a 350 degree oven for 1 hour.)
