Smoked Ham, Gruyere And Carmelized Onion Frittata

INGREDIENTS:

8 Large Eggs
2 Tablespoons Heavy Cream
1 Cup Gruyere Cheese, Grated
Kosher Salt
Freshly Ground Black Pepper
1 Tablespoon Butter
1 Onion, Diced
4 Small Red Potatoes, Diced
1 Cup Smoked Ham, Diced
1 Cup Romano Cheese
1/4 Cup Chives

DIRECTIONS:

Preheat oven to 350 degrees F.

In a large bowl, whisk together eggs, cream, Gruyere cheese, chives, salt, and pepper until foamy.

Saute potatoes and onion in butter until potatoes are mostly cooked. Turn off the burner. Stir the egg mixture into the saute pan. (Egg will begin to cook.)

Pour mixture into buttered baking dish and bake for 20-25 minutes. (Exact baking time will vary slightly given the size of the baking dish used. )

Sprinkle with Romano cheese to serve.

*NOTE: I made this using two compartments of the square Technique supersized silicone bakeware.
