Baked Ricotta

2 Cups

INGREDIENTS:

1 Pound Ricotta
1 Clove Garlic, Minced
2 Teaspoons Italian Seasoning
2 Pinches Salt, More Or Less To Taste
1 Tablespoon Olive Oil

DIRECTIONS:

Note: This recipe works best with handmade ricotta sold specialty stores or Italian markets. If you try to make this dish with ricotta you have purchased in the dairy section of your grocery store, you will need to drain off some of this water by wrapping the ricotta in cheese cloth and letting it drain over a bowl for several hours.

Preheat oven to 425 degrees.

Mix the garlic, herbs and salt into the ricotta. Fill a small baking dish with the ricotta. Drizzle the olive oil on top. Bake for 20 minutes. If the top doesn’t brown enough, you can finish it under the broiler or with a kitchen blow torch.

Serve with crackers.
