Smoky Potatoes Au Gratin

INGREDIENTS:

4 Russet Potatoes, Scrubbed Clean
2 Tablespoons Butter, Softened
2 Cups Half And Half
2 Tablespoons Flour
4 Cloves Garlic, Finely Minced
1 Teaspoon Salt
Freshly Ground Black Pepper, To Taste
1 Cup Cheddar, Freshly Grated

DIRECTIONS:

Preheat smoker to 225 degrees.

Smear softened butter all over the bottom of a baking dish.

Slice potatoes, then cut slices into fourths.

In a separate bowl, whisk together half and half, flour, garlic, salt and pepper.

Place 1/3 of the potatoes in the bottom of the baking dish. Pour 1/3 of the half and half mixture over the potatoes.

Repeat this two more times, ending with the half and half mixture.

Place in smoker uncovered for 1 hour. After the potatoes have cooked one hour, top with grated Cheddar. Test potatoes and finish in 400 degree oven if necessary.
