Chicken And Gnocchi Soup Ala Olive Garden

INGREDIENTS:

2 Tablespoons Olive Oil
3 Tablespoons Butter
2 Garlic Cloves, Minced
3/4 Pound Chicken
2-1/2 Tablespoons Flour
1 Carrot, Shredded
1 Stalk Celery
1 Cup Fresh Spinach, Chopped
2 Cups Half & Half
2 Cups Chicken Broth
1-1/2 Teaspoons Instant Chicken Bouillon
Pepper
12 Ounces Gnocchi

DIRECTIONS:

Melt butter in soup pot over medium heat. Add garlic and saute. Add chicken and cook through.

Add flour and mix well until flour is cooked into the chicken.

Now add milk and heavy cream.

Add veggies and bouillon cubes.

Add gnocchi last. (Takes 3-4 minutes to cook.)

Mix ingredients well until soup thickens, stirring constantly.

Cover and simmer 10 minutes.
