Black Beans And Rice With Mango


INGREDIENTS:

1/2 To 1 Pound Chorizo, Browned And Crumbled
1/2 Cup Red Bell Peppers, Chopped
1/2 Cup Onion, Chopped
2 Cloves Garlic, Minced
15 Ounce Canned Black Beans, Rinsed & Drained
3/4 Cup Water
1 Teaspoon Dried Oregano, Crushed
Salt, To Taste
1/4 Teaspoon Crushed Red Pepper Flakes
2 Cups Or More White Rice, Cooked
1/2 Cup Or More Fresh Mango, Chopped

DIRECTIONS:

Cook chorizo, pepper, onion, and garlic in a large skillet over medium-high heat for about 5 minutes until sausage is browned. Add beans, water, oregano, salt and crushed red pepper. Bring to a boil. Reduce heat; cover and simmer for about 10 minutes.

To serve, spoon bean mixture over rice then top with mango.
