Frittata With Crab And Green Onions

INGREDIENTS:

4 Ounces Mushrooms, Sliced
6 Green Onions, Sliced
2 Tablespoons Butter
6 Ounces Surimi Crab Meat
8 Eggs
4 Ounces Monterey Jack Cheese, Shredded
1 Teaspoon Basil
2 Tablespoons Parmesan

DIRECTIONS:

Cook mushrooms and onions in butter in a 10-inch oven proof skillet until tender, about 10 minutes.

Chop surimi crab meat. Stir into the mushrooms and onions. Mix together eggs, cheese and basil. Pour over crab meat mixture. Cover and cook over medium-low heat until eggs are set and light brown on bottom, about 8 to 10 minutes. Set oven to broil. Sprinkle frittata with Parmesan cheese. Broil frittata about 5 inches from heat until golden brown. Cut into wedges and serve immediately.
