Gourmet Caramel Corn


INGREDIENTS:

1/2 Cup Butter
1 Cup Brown Sugar, Packed
1/2 Teaspoon Salt
1/4 Cup Light Corn Syrup
1/2 Teaspoon Baking Soda
4 Quarts Popped Corn
2 Cups Cashews
2 Cups Pecans
2 Cups Peanuts

DIRECTIONS:

Preheat roaster oven to 200 degrees F. Combine popcorn and nuts in roaster.

Over medium heat, combine butter, brown sugar, salt and corn syrup and boil for 5 minutes. Remove from heat; stir in baking soda. Stir well. Pour over popcorn mixture. Stir to coat well. Bake in large roaster or pan for 1 hour, stirring every 15 minutes. Spread on waxed paper to dry.
