Oven Baked Potato Chips


INGREDIENTS:

1 Russet Baking Potato
1 Tablespoon Truffle Oil*
Coarse Sea Salt, To Taste

DIRECTIONS:

"Peel Potato and pare away any bad spots. Using a mandoline, slice potato into 1/8"" slices. Toss slices in oil and season with sea salt.

Spray a baking sheet lightly with cooking spray. Arrange slices in one layer on the baking sheet and bake in a preheated 375 degree oven for 25-30 minutes or until they are golden throughout. (They will brown at different rates.) Transfer them to paper towels and sprinkle with additional salt as necessary.

Chips make an excellent treat all by themselves, but you might also consider using them as a cracker-like base for things like salmon spread, pate, etc."
