Italian Sausage Soup

4 Servings

INGREDIENTS:

1 Pound Italian Sausage
Olive Oil
1/2 Onion, Sliced Into Rings
1 Stalk Celery
1 Clove Garlic, Minced
1 Quart Chicken Broth
1/2 Tablespoon Tomato Paste
Pinch Oregano
Pinch Basil
1 Zucchini, Sliced
1/4 Cup Spinach

DIRECTIONS:

Saute the sausage in a tablespoon of oil ina stockpot. Add onion, celery, and garlic, cook until lightly browned. Remove and slice. Add the broth, tomato paste, seasonings, and additional vegetables, bring to a boil, reduce heat and simmer for 4 hours or more. Serve with lots of grated fresh parmesan cheese.
