Ham And Cheese Soup

INGREDIENTS:

1 Tablespoon Olive Oil
1/2 Cup Onions, Chopped
1/2 Cup Celery, Chopped
1/4 Cup Green Pepper, Chopped
1 Cup Ham, Diced
4 Cups Chicken Broth
1 Bay Leaf
1/2 Teaspoon Dried Basil
1/4 Cup Heavy Cream
1/4 Cup Cheddar, Grated
3/4 Cup Velveeta, Cubed

DIRECTIONS:

Fry all onions, celery and green pepper in oil until tender. Add ham and saute briefly. Add chicken broth, bay leaf and basil. Simmer for 20-30 minutes. Add cream and return to boil to thicken a bit. Slowly add cheese, stirring constantly.
