Zucchini Pancakes--Savory

INGREDIENTS:

1 1/2 Cups Zucchini, Shredded
1 Egg, Lightly Beaten
2 Tablespoons Atkins Baking Mix
3 Tablespoons Parmesan Cheese, Grated
1 Dash Pepper
1 Tablespoon Cooking Oil

DIRECTIONS:

In a bowl, combine zucchini, egg, biscuit mix, cheese and pepper. Heat oil in a skillet over medium heat; drop batter by 1/4 cupfuls and flatten. Fry until golden brown; turn and cook the other side.
