Mashed Cauliflower Casserole

INGREDIENTS:
3 Cups Cauliflower
1/4 Cup Butter
1/2 Cup Sour Cream
Salt, To Taste
1/2 Cup Cheddar, Grated
DIRECTIONS:
Steam cauliflower until very tender. Mash with salt, butter and sour cream. Mash with hand masher and transfer to mixer to process until as smooth as possible. Pour into casserole dish and top with grated Cheddar. Bake at 350 degrees F. until cheese melts.
