Fauxtatoes Deluxe

INGREDIENTS:

1/2 Head Cauliflower
3 Tablespoons Heavy Cream
2 Ounces Cream Cheese
1/2 Tablespoon Butter
Salt
Pepper

DIRECTIONS:

Simmer the cauliflower in water with the cream added to it. (This keeps the cauliflower sweet and prevents it from turning an unappetizing gray color.) When the cauliflower is very soft, drain thoroughly.

Put the still-warm cauliflower in a food processor with the cream cheese, butter, and salt and pepper to taste, and process until smooth. (You may have to do this in more than one batch.)
