Garlic Piperade Soup

INGREDIENTS:

20 Cloves Garlic
2 Cups Onions, Sliced
1 Cup Green Pepper, Sliced
1-1/2 Tablespoons Olive Oil
3 Cups Tomatoes, Sliced
2 Cups Beef Broth
3-4 Slices Dark Bread, Cubed
Pepper
Parmesan

DIRECTIONS:

Blanch garlic in boiling water for 30 seconds, rinse, drain, and peel. Slice garlic thinly. In a large saucepan, saute the onions and peppers in oil 8-10 minutes until soft and golden. Add garlic and tomatoes. Reduce heat. Cover pan, and simmer 30 minutes. Add broth, and heat soup to a boil. Add pepper. Serve over bread cubes, and garnish with Parmesan.
