Santa Fe Chicken Fajita Soup

INGREDIENTS:

1 Pound Boneless Skinless Chicken Breasts, Cut Into Cubes
1 Package Fajita Seasoning Mix
1/3 Cup Water
4 Cloves Garlic, Minced
2 Tablespoons Fresh Cilantro, Chopped
1 Red Onion, Chopped
1 Green Pepper, Chopped
8 Ounces Neufchatel, Cut Into Cubes
16 Ounces Velveeta Light, Cut Inito Cubes
29 Ounces Low Sodium Chicken Broth

DIRECTIONS:

Toss chicken with seasoning mix and water in bowl; cover. Refrigerate at least 30 minutes.

Spray large nonstick saucepan with cooking spray. Add garlic and cilantro; cook on medium-high heat 1 minute. Add chicken mixture, onion and pepper; mix well. Cook 10 minutes or until chicken is cooked through, stirring frequently.

Add neufchatel, prepared cheese product and chicken broth. Reduce heat to medium. Cook until cheeses are melted and mixture is thoroughly heated, stirring occasionally. Garnish with additional chopped cilantro.
