Deep-Fried Chicken

INGREDIENTS:

3 Pounds Chicken Pieces
Peanut Oil
1 Cup Flour
1 Teaspoon Salt
1 Teaspoon Pepper
1/4 Teaspoon Cayenne Pepper

DIRECTIONS:

Wash the chicken pieces with cold water. Drain well. Pat dry.

Put enough peanut oil in a large pot to totally cover the chicken pieces. (They should float in the fat.) Heat the oil to 360 degrees.

Combine the flour, salt, pepper and cayenne in bag and shake to mix. Add chicken pieces one at a time, shaking to coat.

When the peanut oil reaches 360 degrees add the chicken pieces. Deep fry 2-3 minutes, until the meat begins to float. Remove and drain.
