Lemon Chiffon

INGREDIENTS:

3/4 Cup Boiling Water
3 Ounces Lemon Jello
1 Teaspoon Lemon Rind, Grated
1 Tablespoon Lemon Juice
1/2 Cup Cold Water
Ice Cubes
1 3/4 Cups Cool Whip Lite

DIRECTIONS:

Pour boiling water into blender. Add gelatin, lemon rind and lemon juice. Cover and blend at low speed until gelatin is completely dissolved, about 30 seconds. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin and stir until ice is partially melted. Then add whipped topping: blend at high speed for 30 seconds. Pour into serving bowl or Desserts dishes. Chill until set, about 1 hour. Garnish with additional whipped topping and thin lemon slices, if desired.
